Gingerbread cake

I made the boy a gingerbread cake for his birthday. I found the recipe for the cake in one of our Delicious magazines and the icing idea on taste.com.au. I baked the cake a few days ago and popped it in the freezer to keep until his b-day. This morning, I whipped together the simple icing and voila.. ready to go!
- 1 1/2 cups flour
- 1/2 tsp baking soda
- 2 tsp ground ginger
- 1 tsp cinnamon
- 1/4 tsp cloves
- 1/4 tsp allspice
- 2-3 Tbsp chopped candied ginger
- 1 stick butter (room temp)
- 1 cup brown sugar
- 1/2 cup molasses
- 2 eggs
- 1/2 cups buttermilk
- 1 1/2 tsp vanilla
Icing:
- lemon juice and icing sugar. I used about 3/4 cup of icing sugar and about a tablespoon of lemon juice. Decorate with more chopped candied ginger.
Update:
Ooops, I was in such a rush to get this post written yesterday that I forgot the baking instructions. I baked this in a 9 inch round cake pan at 350 degrees for about 40 minutes. Admittedly, I wasn’t keeping track of the time - I just kept pricking the cake with a toothpick until it came clean.
